Swedish Almond Cake

Ingredients:

  • 1/4 cup of sugar
  • 1 egg
  • 1/2 teaspoon of almond extract (feel free to add a little more)
  • 2/3 cups of milk
  • 11/4 cups of flour
  • 1/2 teaspoons of baking powder
  • 8 tablespoons of butter (melted)

Directions:

  1. Preheat oven to 350F
  2. Beat sugar, egg, almond extract, and milk together (I used a hand mixer)
  3. Add flour and baking powder
  4. Then add melted butter
  5. Grease the baking dish
    Personal note: The first time, I tried spraying it, but that didn’t work as well. The pan is already non-stick and it all slid to the bottom. All subsequent tries, I merely greased the pan using a stick of butter (well, more like a tablespoon, and it worked much better when it came time to take the cake out of the pan.)
  6. Pour batter into the pan
  7. Bake cake for 50 minutes (the last 2 times, I baked it for 45 minutes, and it seemed perfect)
  8. Once done baking, allow to sit out and cool for at least 20 minutes
    I have started letting it set for about 45-60 minutes. It came out cleaner when I let it sit longer. Sometimes, I used a little rubber spatula to help ease it out for the couple places where it seemed to stick a little. 
  9. Feel free to dust with powder sugar before serving
