Bruschetta Chicken

Modified from: https://www.delish.com/cooking/recipe-ideas/a53594/grilled-bruschetta-chicken-recipe/

Ingredients

  • 4 tablespoons. extra-virgin olive oil
  • 2 tablespoons of lemon juice
  • Kosher salt
  • black pepper
  • 1 teaspoon Italian seasoning
  • 3 chicken breasts, butterflied and pounded to even thickness
  • 1 slicing tomato, chopped
  • 1 teaspoon basil
  • Slices of a white cheese

Directions

  1. In a small bowl, combine oil, 1 tablespoon of lemon juice, 1 teaspoon kosher salt, 1/4 teaspoon pepper, and 1 teaspoon Italian seasoning and whisk to combine. Pour into a large re-sealable bag.
  2. Butterfly (or completely cut in half) the chicken. After cut, pound it to even thickness. Put the chicken into the bag with the seasonings; seal and refrigerate for 30 minutes.
  3. Heat grill over medium-high then add chicken, discarding excess marinade. Grill until charred and cooked to an internal temperature of 165°, about 5 to 7 minutes per side.
  4. Meanwhile, combine chopped tomatoes, basil, and remaining lemon juice, and season with salt and pepper in a small bowl. You can add more tomato and basil (1 teaspoon basil per tomato). While chicken is still on grill, top each breast with 1 slice cheese and cover until cheese is melted.
  5. Once off the grill, top chicken with tomato mixture and serve.

Swedish Almond Cake

Ingredients:

  • 1/4 cup of sugar
  • 1 egg
  • 1/2 teaspoon of almond extract (feel free to add a little more)
  • 2/3 cups of milk
  • 11/4 cups of flour
  • 1/2 teaspoons of baking powder
  • 8 tablespoons of butter (melted)

Directions:

  1. Preheat oven to 350F
  2. Beat sugar, egg, almond extract, and milk together (I used a hand mixer)
  3. Add flour and baking powder
  4. Then add melted butter
  5. Grease the baking dish
Personal note: The first time, I tried spraying it, but that didn’t work as well. The pan is already non-stick and it all slid to the bottom. All subsequent tries, I merely greased the pan using a stick of butter (well, more like a tablespoon, and it worked much better when it came time to take the cake out of the pan.)
  6. Pour batter into the pan
  7. Bake cake for 50 minutes (the last 2 times, I baked it for 45 minutes, and it seemed perfect)
  8. Once done baking, allow to sit out and cool for at least 20 minutes
I have started letting it set for about 45-60 minutes. It came out cleaner when I let it sit longer. Sometimes, I used a little rubber spatula to help ease it out for the couple places where it seemed to stick a little.
  9. Feel free to dust with powder sugar before serving
