Ingredients
- 4 tablespoons. extra-virgin olive oil
- 2 tablespoons of lemon juice
- Kosher salt
- black pepper
- 1 teaspoon Italian seasoning
- 3 chicken breasts, butterflied and pounded to even thickness
- 1 slicing tomato, chopped
- 1 teaspoon basil
- Slices of a white cheese
Directions
- In a small bowl, combine oil, 1 tablespoon of lemon juice, 1 teaspoon kosher salt, 1/4 teaspoon pepper, and 1 teaspoon Italian seasoning and whisk to combine. Pour into a large re-sealable bag.
- Butterfly (or completely cut in half) the chicken. After cut, pound it to even thickness. Put the chicken into the bag with the seasonings; seal and refrigerate for 30 minutes.
- Heat grill over medium-high then add chicken, discarding excess marinade. Grill until charred and cooked to an internal temperature of 165°, about 5 to 7 minutes per side.
- Meanwhile, combine chopped tomatoes, basil, and remaining lemon juice, and season with salt and pepper in a small bowl. You can add more tomato and basil (1 teaspoon basil per tomato). While chicken is still on grill, top each breast with 1 slice cheese and cover until cheese is melted.
- Once off the grill, top chicken with tomato mixture and serve.
